Nutmeg (Mryistica fragransis) is notorious for being the most hotly fought over spice in history, but today it can be found in almost every kitchen. Nutmeg is the seed of the tree and is surrounded by a lacey outer-layer that is removed and sold separately as Mace. Nutmeg has unique fresh woody flavour with peppery overtones which adds a delicious piquancy to bland dishes like rice pudding, egg custard or potato dishes. In Indian cuisine it is known as Jaiphal and mainly used for sweet dishes. It is also used in mulling spices and can add flavour to meat dishes. Nutmeg is best ground fresh just before use and special nutmeg mills are available for this purpose as it is not easy to do using a domestic grater.
