| White Pepper comes from the same plant as Black pepper but consists solely of the seed of the berry. Fully ripe berries are soaked until the flesh falls away allowing the seed to be removed and dried. White Pepper has drifted out of culinary fashion over the past decades but actually has important qualities that merit consideration. Prime amongst these is the fact that it can withstand higher temperatures than black pepper without loss of flavour, making it a more versatile cooking ingredient. The other important quality is its ability to flavour without visibility, for example in pale sauces and dishes. The flavour of white pepper is marginally different to black pepper, being slightly sharper. Opinions vary as to whether it is hotter or not. Use whole in pickling and marinades or grind in the same way as black pepper. Try mixing black and white peppercorns together in a mill for added interest. |
