| Pink Peppercorns (Schinus terebinthifolius) are also known as Pepper Rose (Baies Rose). The spice is not related to Black Pepper, coming instead from a tree that was originally native to Reunion Island and produces peppercorn sized berries which are pink when ripe. These are dried and may be used in a similar way to peppercorns but provide a much more subtle, mild sweetish flavour. Pink peppercorns are recommended for asparagus and other vegetable dishes, as well as for fish and other light recipes. The spice is popular in French cuisine. |
