| Black Pepper (Piper Nigrum) is the unripe dried fruit of a tropical vine and is one of the most common and popular spices. Crushed black pepper is best suited to red meats, marinades and dishes or sauces in which the pepper is to be noticed. Ready ground pepper loses flavour and aroma through evaporation so it should be stored in an airtight container that is no bigger than it has to be, or the packet should be folded down to exclude as much air as possible. Add towards the end of cooking as high temperatures will reduce its flavour. |
