Lime Leaves (Citrus hystrix) are often called Kaffir Lime Leaves. They come from a thorny bush native to Indonesia and are widely used in Asian cuisines, being most commonly associated with Thai dishes. The taste is very characteristic and not easily described being a mixture of lemon/lime with sour overtones with a strong refreshing and clean aroma. Whole leaves are usually added at the start of cooking and removed before the dish is served.
