French Lavender (Lavandula stoechas) is the variety grown specifically for culinary use and the familiar flowery smell is a big part of its attraction. It needs to be used very sparingly and is often partnered with other herbs and spices. As few recipes specifically call for lavender it is useful to know that it can usually be successfully substituted where Rosemary is mentioned, particularly in robust meat dishes.
Add lavender to a sealed jar of sugar and leave for a few weeks to create lavender scented sugar. This can then be used in cakes and shortbreads, or even custards and ice-cream. |
