Caraway (Carum carvi) is a native European plant related to the Parsley family and it is the crescent shaped fruit that we misname Caraway seeds. Most popular in northern European cuisine, and an essential ingredient to Sauerkraut, it is also used to providing character to many meat, vegetable and cheese dishes. Caraway does not generally combine well with other spices although it blends well with garlic. Caraway has a distinctive nutty and slightly aniseed flavour that can be used both in savoury and sweet dishes. In bread making Caraway seeds can be either mixed into the dough or sprinkled on top of the uncooked dough. When used in recipes with quick cooking times it is usual to toast, or dry-fry, the seeds first to release their fragrance.
